I found this recipe many years ago and have since modified it to my liking. It is the best recipe for chicken and dumplings EVER (if I do say so myself…), so I thought I’d share it with you.
Chicken and dumplings recipe
Prep time: 1 hour
Servings: 6-8
What you’ll need:
3-4 chicken breasts
2-3 chicken bouillon cubes
8 cups water
What you’ll need for DUMPLINGS:
2 cups all purpose flour (or whole wheat flour)
3 tablespoons butter (or you can use 3 tablespoons shortening)
½ teaspoon salt
½ teaspoon baking soda
1 cup buttermilk (or 1 cup of regular milk)
In a large pot; boil water, chicken and bouillon cubes on high heat while you prepare the dumplings.
In a large mixing bowl combine all ingredients (for dumplings) and mix until mixture has a sticky dough look.
Once the chicken is cooked thoroughly remove from pot and place on a plate or cutting board. Start dropping teaspoon size amounts of dough into the boiling water stirring occasionally to prevent the dumplings from sticking.
When the dumplings are added, reduce heat to medium/low and cut chicken and return to pot with dumplings. Stir occasionally for the next 15 minutes.
Remove from heat and let cool for 5-10 minutes and serve.

Yes, the first day of school is official underway and what a great morning it has been. Any other day my kids would have killed me for waking them at the crack of dawn (6:15am), but oh how excited they were this morning when I turned on the light to get them up and going…although I did manage to sneak a few pictures of my sleeping angels beforehand.
Now, I have 7 hours in a day to do what I need to do without having to stop and tend to the kids. It’s pretty neat. It’s also a bit scary knowing that my kids are growing up so fast. It feels like just yesterday they were crawling around in their diapers…oh how time passes before your eyes.
I was a bit camera happy this morning with the girls; my son wouldn’t allow me to take any pictures of him (which I figured would happen), but at least I was able to get a hug before he walked out the door.

I was asked a long while back to crochet an afghan for a friend of mine as a gift to her mother…I got an email this evening from a place where I had posted my project (it was a giveaway I entered for handcrafted work; wich I did win a gift card for [yeah!!!]).
Aside from entering giveaways, I love to crochet afghans, sweaters, dolls and what have you. This is one that I am and always will be very proud of. I have often wanted to do this for money, but very seldom do I get any offers or requests. I have been doing this for about 13 years now and can normally crochet any sized afghan in a matter of two weeks (I’m a very anxious person and will not stop working until I have completed my project).

JUST A NOTE:I had to shrink the size just a tad (so it would fit); it went from a 593×650 to a 500×650. It’s not perfect, but the afghan is what was important to share. Enjoy…
